This slaw is so good!! I make it once, sometimes twice, a week and we never have leftovers. I keep increasing the batch size and even that doesn't seem to help out the lack of leftovers ;)
I remember seeing a recipe similar somewhere and couldn't for the life of me find it again when I wanted to try it for the first time so I just kind of winged it.
We LOVE it!!!
One Small Cabbage, sliced thin
10-12 small radishes (I actually used 14), sliced with a mandolin
6 Green Onions, sliced
3 Tbsp. Cilantro, Chopped
4 Tbsp. Olive Oil
3 Tbsp. Fresh Lime Juice
Salt & Pepper, To Taste
Combine the cabbage, radishes, green onions and cilantro in a big bowl. Add the olive oil (I used EVOO in this batch, but have also used pure olive oil and prefer that) and the lime juice. Season with salt & pepper and combine.
